Cooking for Lughnassadh: Pear Upside Down Cake

This cake is extremely moist and delicious. This recipe calls for pears, but if you don't like pears you can easily substitute apples, apricots, pineapple or peaches instead.






Pears and grains, fruits and wheat
Begin their lives beneath my feet

Enrich my life and make me whole.






Preheat oven to 350 degrees.

INGREDIENTS:
2 Tbsp. butter
1/3 cup packed brown sugar
1 Tbsp. water
8 oz. of canned or fresh pears
1 1/3 cups flour
2/3 cup sugar
2 tsp. baking powder
2/3 cup of butter
2/3 cup of milk
1 egg
1 tsp. vanilla


1- Melt the 2 Tbsp. of butter in the oven in a 9 inch round cake pan.
2- Stir in the brown sugar and 1 Tbsp. of water.
3- Arrange the pears in the cake pan and set aside.
4- In a medium mixing bowl, stir together the flour, sugar and baking powder.
5- Add the 2/3 cup of butter (cut in with a fork), milk, egg and vanilla. Stir until well mixed.
6- Spoon over fruit in the prepared pan.
7- Bake for 30-35 minutes
